175g rice
600ml plant-based milk
200ml coconut milk (half a can)
3 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon orange extract (or grated orange peel)
1 teaspoon cinnamon (or to taste)
Preparation:
In a pot, combine the rice, plant-based milk, and coconut milk. Add honey, vanilla, orange extract, and cinnamon. Place the pot on medium heat, stirring occasionally, and wait for it to boil. Once it starts boiling, reduce the heat and simmer for about 30 minutes, stirring often, until the rice softens and the mixture becomes creamy.
If necessary, add a bit more plant-based milk. Serve warm or cold, topped with additional cinnamon, dried fruit, or jam of your choice.
